do you wanna go for a curry wif me

i watched a cooking show once where they had an elderly indian woman schooling them on the basics of making a curry. here is what i learned.

1)ALWAYS START WITH YOUR ONIONS. saute them until soft in ghee (note, the ones above were not soft enough, i knew this at the time, moving on), then spice them with whatever spice medium you use. i use powder because it's cheaper than paste and i'm poor. you spice the onions because they will be evenly distributed.

that's it, after that do whatever you want. i add whatever veggies i have then fry em till they're how i want them then i add some coconut milk and a wee bit of water and simmer it down. add tofu if the mood strikes. put it on rice with a green side.

don't forget to eat it with your grandma's peach chutney that is so delicious and rare that your mom "forgets" to give it to you and you find it in the fridge at christmas with your name CLEARLY labelled on it and have to ask for it even though it was supposed to be yours. I'M ON TO YOU, MOTHER.

this i made the next day. throw your leftover curry into tomato soup, add a bit more spicy heat and some chopped, frozen spinach. it is to die.
