roasted chickpeas

do you love crunchy things? salty things? delicious things?

i am asking you if you are addicted to chips. i am. it's a problem. chips and french fries are probably the WORST things you can eat, and are also the things that i cannot NOT eat if i see them. my mouth is actually watering right now. i am thinking about lays plain chips, in their salty, near-translucent perfection.

enter chickpeas.

chickpeas have almost no fat, are full of protein and fibre - two things you really need, especially if you are a vegetarian with IBS, like me. yeah, i said it. COOL BEANS.

lets make them taste better. we are going to roast them. just trust me! put your oven at 375.

rinse off your chickpeas really well, then blot them dry OR, do as i did and throw them in your currently heating-up oven on a tray to dry roast them a little before adding your seasoning. i left them in for about 10-15 minutes to really help them dry out. this helps them get crunchy later-if you toss them in oil before they're dry it locks in the moisture and they won't get as crunchy.

then, toss them in a bowl with a tiiiiny bit of olive oil. too much oil and they won't crunch up, and also what's the point of making them, just eat some chips!

when you've added your oil, decide on spices. i used curry and garam masala. pinch of salt and you're done. i'd love to make a super hot spicy batch.

put em on your tray. i use this super old baking tray. it's like tyrion lannister likes his bacon: burnt black. but it doesn't have non-stick cancer-causing BS on it so i love it. i don't know what i would do without these old trays, it's near impossible to find ones that don't have non-stick coating on them (i've tried). this rant feels familiar. you're welcome for beating this into your head.

roast them for about 30-40 more minutes, depending on the level of crunchiness you desire.

these are like corn nuts in texture, but taste smoky and delicious. make them!
