quest for chocolate

chocolate chip cookies, that is. i want to make "the best" chocolate chip cookies. i have achieved this once before, here, but the recipe i used for these is kind of a mystery because i was using two different recipes and i combined them based on whatever imaginary logic i was using at the time. probably along the lines of "this one has more butter so i'll use that amount". mostly, i have no idea. they were amazing, the best i've ever made. slightly crispy on the outside, flat AND lumpy, chewy on the inside. huge hit.

so anyway, there's this recipe that the new york times listed as the best one ever, so i wanted to make that to put it to the test.

it makes use of a KitchenAid, which i happen to have. this is glorious because hand-creaming the butter, which i may or may not have forgotten to soften is a pain.

so, switch her on with the butter and sugars and make yourself a cocktail while the hard work is being done for you. i went vodka/pomegranate/elderflower. feel free to improvise as you see fit.

add your wet ingredients (eggs, vanilla) yes be a snob and use a pod, nothing is too good for the best chocolate chip cookies ever.

add your flours (i even used the two different kinds) and other dry ingredients, combine with the mixer, then add your chocolate chips.

always, ALWAYS use mini kisses for this purpose. put in what the recipe calls for, then add some more, until they barely fit.

okay, so i'm about to get to the sad part. i forgot the baking soda. i also did the thing where i let the dough chill for a few hours instead of 24-36 because "everyone on the internet" said they are just as good. THEY ARE NOT JUST AS GOOD. the baking soda should not make a huge difference, because it's job is to make the cookies rise, and mine just didn't flatten out. too tall, too hard (that's what she said). i will consider trying these again with the baking soda, perhaps less flour, and with the full chill time. these were really disappointing*, THE END.

*this is not to say i am not eating one at this very moment.
